Ingredients (240 ml cup used)

  • 1 ¼ cup chopped baby corn
  • ½ cup Bell pepper / capsicums
  • 1 medium tomato
  • 1 medium onion
  • 1 tsp. grated ginger or ginger garlic paste
  • 1 green chili slit (optional)
  • Oil as needed
  • ¼ tsp cumin
  • ¼ to ½ tsp. red chili powder
  • ½ to ¾ tsp garam masala
  • Coriander leaves or pudina / mint for garnish

How to make the recipe

  1. Wash baby corn under running water. Wash other vegetables too.
  2. Slice baby corn to ¼ inch pieces
  3. Slice capsicums, chop onions and tomatoes
  4. Heat a pan with oil, add cumin and ginger, fry till the ginger turns aromatic
  5. Add onions and fry till they turn slightly golden, no need to brown them
  6. Add tomatoes, sprinkle salt and turmeric and fry till tomatoes turn mushy
  7. Add baby corn & capsicums. Fry for 2 to 3 minutes
  8. Add chili powder, garam masala, more salt if needed and fry for 2to 3 minutes on a medium flame.
  9. Cover and simmer on a very low flame till all the flavors are absorbed and the baby corn gets cooked. I do it for almost 7 to 8 minutes, stirring occasionally. If it is too dry, sprinkle little water to prevent burning.
  10. Garnish baby corn sabzi with coriander leaves or pudina
